One tasty homemade alternative is based on bananas. Gather six ripe bananas (mashed), three tablespoons maple syrup, two lightly-beaten eggs, 1/2 cup each turbinado sugar and butter, 1/2 teaspoon salt, one teaspoon baking powder, and two cups all-purpose (gluten-free) flour.
Preheat oven to 350 degrees. Mix salt, baking powder and flour. Process the sugar and butter in a blender until creamy. Stir in the bananas, syrup, eggs until thoroughly mixed. Blend the flour and banana mixtures until moist.
Spoon the mixture into a lightly-greased nine-by-five inch loaf pan. Bake for about 25 minutes, cool and serve. To make this recipe vegan, replace the butter with vegan margarine, and the eggs with two additional mashed bananas.
Another recipe is based on walnuts and rosemary. The ingredients include 1/2 cup chopped walnuts, 1/2 cup extra virgin olive oil (plus five tablespoons to grease the pan), four teaspoons fresh rosemary (chopped), one and 1/3 cups warm carbonated water, one tablespoon each of honey and guar gum, one teaspoon each of apple cider vinegar and salt, three eggs (room temperature), five teaspoons instant dry yeast, 1/4 cup buttermilk powder, one cup each of white rice flour, tapioca starch and arrowroot starch, and one and 1/4 cups all-purpose gluten-free flour.
Mix all dry ingredients thoroughly. In a separate bowl, beat the eggs, then add the honey, olive oil, vinegar and water. Slowly mix the liquids into the dry ingredients, and beat for two minutes. Stir-in the walnuts and rosemary, and let rest for 30 minutes.
Pour mixture into a two-quart, greased casserole dish. Brush the top with olive oil, cover and bake at 400 degrees for 40 minutes. Cool before serving.
